Is it possible to change the metadata from a picture I meen the camera shuttertime and all other data?
If so how you can acces this data for editing?

I don’t think this is possible from within Photoshop, this data is written to the file when the file is created in the camera. You can add to this info by going to File>File info.

You should do a search for ‘EXIF Editor’. There’re a view with which you can view a./o. edit a./o. backup EXIF data.
