I got CS and I love it but I can’t figure out how to save a photoshop file down to an older version of photoshop.

Just save it. Photoshop 8 (CS) files (PSD, TIFF, JPEG) are backward compatible (as long as you’re not over the 2GB file size limit of older versions).

What about text on a path, the new photo adjustment layers, and the new blending mode, how is it rendered in earlier versions?

That’s why you save with maximum compatability. If the earlier version does not support those features it opens the flattend version in the file.
