I now have a fully functioning Epson R2400 on my Mac Pro. It turns out the driver on the Epson site for the Intel Mac does work, but you have to do a couple of things to get it there.
First, you have to delete all of the Epson folders on your system. Completely. Drag them to the trash, empty the trash, then reset your printer system and restart your computer. There is something in the Epson stuff that comes with the Mac Pro that makes the driver not work.
After you have deleted everything Epson from your system, reset the printer system and restarted your Mac Pro, install the Epson11771.dmg file you downloaded from Epson. If you do this, the R2400 is the only Epson driver on your system.
At this point you should be able to install the R2400 and print!
