Converting RGB to Duotone Cyan and Black

I currently have a map in RGB that has several shades of black and cyan(actually their RGB approximations) in the symbology. This map is to be printed in only Cyan and Black. What I need is to have this converted to CMYK using only the C and K (no magenta or yellow!) Simply deleting the channels does not produce acceptable results. Is there a way to convert to CMYK using only C and K? There aren’t that many individual colors, is there a way to set the CMYK values for each swatch and have it update the entire file appropriately?

First I would convert to CMYK with maximum GCR to avoid CMYK blacks.

Then you will need to adjust the curve of the cyan channel as it will probably not be 100% where it needs to be.

Then fill the Mag and Yellow channels with white, don’t delete them.

Sorry, I’m a bit of a novice in PS. How do I fill the channels with White as you suggested?

Although an expensive product, it lets you do a couple of trials.
