This question might sound newbiesh, but how do you keep your brush strokes in your image/text and to keep it out of the background.

I’m not sure I understand your question—but here’s my "attempted" answer.

Your document is a "canvas" your air brush will spray all over.

To constrict your "painting" to a specific area, open a new layer and then utilize one of your selection tools to define the area you want to paint.

For example, draw a circle or rectangle or irregular shape with the lasso.

I might be missing something, so hopefully the "smart people" will chime in.

Select the area you want to paint over first before using the airbrush. Selections can be made with wand, lasso, marquee, etc. If you are just changing the colour, consider changing the airbrush’s mode from "normal" to "colour" and paint on the layer (or better, paint on a separate layer set to "colour")

Or make a clipping group and paint on the clipped layer.

Or put the text in a layer mask and paint on the layer.
