Can you stroke a selection with a defined brush? Having trouble finding how or if i can do this.

yes- convert selection to path > choose your brush in brush pallet > stroke.

Thank you, I was a$$ backward, creating a path, then converting to a selection before trying to stroke.

But selections can’t be stroked with tools (because there is no definite line to follow) – so of course you have to use a path to stroke with a tool.
