Can anyone tell me what the texture channel is/does and how to use/get it? Also, I would like to know how to paint a texture onto an image. Thanks!

Ther is no texture channel. Channels has rgb, red, green, blue, and alpha channels. do mean the patterns layer? Patterns can be used for backgrounds. you can fill with a pattern you can paint with pattern uesing the pattern stamp.
