If it's a PDF, Pitstop willconvert the type to a PMS color. If it's a PDF from Photoshop, many times when you reopen them in Photoshop it brings in the original layers in the Photoshop file and you can actually work on the type on a layer if you have the correct fonts loaded. If you would like I would be happy to convert them for you.

Thanks for the info, the files opened as rasterised, very pixelated (therefore uneditable as text)72 ppi scans in PDF format on one layer. They consisted of a few lines of text, one also had two logos .
I increased the resolution to 600 ppi to reduce the pixelation. Changed the file mode to CMYK
Used Select>Color Range to select the text.
Then filled the text with the PMS colour with ctrl+backspace.
It would have been possible to copy and paste the text i(editable) into PS from Acrobat but that would left the problem with logos.
