I have several scripts that I use all the time and I was wondering if I could create custom buttons/tools that would execute these scripts, rather than going through the file>scripts menu?

Yes, you can create an action using Inset Menu Item and select your script or you could create a shortcut Edit - Keyboard Shortcuts or you could even amend your script so they show in the Filter Menu.
If you are using CS4 you could use configurator and create a custom panel.
