Is there a way to have all my files open as "floating windows" (the way it used to be) every time I start photoshop and/or every time I open a new file? I do not like the new interface and every time I open a new file I have to go to that drop down button and click "float all in windows".

Yes, deselect "open documents as tabs" in Preferences > Interface.

I must be missing something, my CS3 doesn't seem to have that option in "open documents as tabs" in Preferences > Interface.

Well it does... the only thing to remember is if you are dragging a picture and dropping it into Photoshop, you will need to drag it to the grey bar just above the central work area (the icon will change to a small plus sign) then the file will appear as floating one.
This is on a 32bit vista machine by the way.

if you put workspace on "legacy" it opens docs like before as floating windows

Many thanks KatWoman, that's how I've always had my open files. I just can't understand why my CS3 didn't have the options as described.
