Just search the Canon (or any) forum at dpreview for "HDR". I have seen numerous examples, in the Nikon forum and they are either using PS or Panotools (the ones I’ve seen recently anyway)
As to PS being better, if you have it, use it, then if you either find the process to restrictive or the effect not what you hoped, try another. Remember, some say that this can be done using one RAW image saved at different exposures, maybe it can, but not as effectively as using multiple exposures exposed for ranges differing ranges.
You need at least 3 even 5 (and I have seen more on some HDRs) taken in a bracketed sequence, so a good support and either some sort of remote release or timer operation is needed.
You do not want to be jabbing the shutter release with your finger when camera is on a tripod.
