When converting an image into Grayscale Mode, it retains CMYK and RGB values. The colors are converted to gray but still have color values. How do I make an image truly Grayscale? Thank you!

You just need to change the way your info palette reads and set it to read "Actual Color" or "Grayscale". The numbers you are seeing now are what the numbers would be if you converted to RGB or CMYK using your current setup. You can doublecheck that you have only one single channel in your Channels Palette, indicating that you indeed are in Grayscale mode. You can also set the dropdown menu in the lower lefthand corner of your document window to show your document profile, which another way to check just which grayscale space you're actually in.

Thank you for the replies. What I am trying to do is take a color image and make it grayscale with one spot color. I was trying to convert the existing color to grays by changing it to grayscale, but when I changed it back to color, it had color info. What is the best way to convert an image to shades of gray with only one color? Thank you so much for your help!

That's a whole different ball game. You'll need to add a spot channel for that.
