Just found this thread and nobody is mentioning the easiest workaround to the hidden palettes issue. In Photoshop just tap the Tab key twice. This "hides then shows" the palettes, and it works.

My theory is that this bug is entirely to do with the fading palettes feature in CS3. The palettes are not actually hidden, but in fact at 0% opacity, and due to some strange spaces issue, are not being triggered properly to fade in. Hiding then showing them using the tab key hides them, then shows them at default 100% opacity.

Either Adobe or Apple could fix this. Apple: make sure when you switch a space the application receives the correct focus events at the right times. Adobe: include an option in Preferences to disable palette fading, because even if this bug didn’t occur, some people don’t want it anyway!

That’s an interesting theory and may well be correct that it has to do with the fading issue. The two tabs press work around is a good find.
