I’m trying to get a sharp stroke to my type rather than rounded edges (i.e. 3 pt stroke on 36 pt type looks too balloony) – is there an option somewhere that I’m missing? Thanks!

The stroke option in photoshop can’t do sharp edges. Illustrator would be better for this type of thing since you can change the kinds of corners you get on your stroke. However, in photoshop you can work around this limitation in this way; make a duplicate of your type layer, change it to your desired stroke colour, and go to filter-other-minimum, rasterize the layer when it prompts you, then enter a value for how much you want the pixels to spread.
