assign profile – convert profile??

Hello,
I am confused with all this converting options.
what I have to do, to see the colors, as correct as possible, for offset printing?
1. assign a profile ?
2. convert to a profile ?
in the first case, I see color- differences
in the second case I see no difference between my and the printers profile.

So which one is the right one to use for my color-corrections? Thanx for any help, the books are not giving me any answer. Juliane

You assign a profile when, for whatever reason, the correct profile information has been lost, and you know which profile was used to create the image.

You convert to a profile when, again for whatever reason, the profile that the image file contains does not match the working profile for your Photoshop.
