What is the best way to cut an image into sections for printing onto multiple sheets so that, when re-assembled, the edges match? Thanks.

Photoshop 7 has the Slice tool which basically does this. It was made for web-design, but I could see how it could be used for
print as well...

The best way is to put the image into a page layout or an illustration program that can tile-print. You need the edges to overlap a little, not match, because they will never match perfectly.

Some Epson printers will do this automatically.
