Photo food in glass plate. After the mask, color of the background is in the glass not obscured by the food. How to change that color to match the color of the fake background now?

Million ways to do it,but maybe replace color would be an easy way.put the eye dropper on the red,adjust the fuzziness slider as needed,and use hue sliders to fine tune.

Create a new layer above the plate layer. Fill it with the new background color. Change the blend mode to color or hue. Apply a layer mask in hide all mode, then paint with white in the layer mask to recolor the problem areas.
