How do you change the stroke color in the blending options mode. I want to outline text in another color than the red that is the current selected color in my CS2 program.

You click on the red square in the dialog window. This will bring up a color picker window which allows you to choose any color.

Photoshop comes with a very extensive help file. Learn to love it! A good place to start looking for the answer to a question like this might be under "blending modes."
