What is the best way to cut images out of eps files?

Hi,

I have received EPS files but I am not to familiar with Illustrator. I know Photoshop but I am not sure what is the best way to cut some images. Should I just open with Illustrator and export as PSD files so Photoshop could easily work with and not loose any originality. Or the images are best cut in Illustrator?

What is the way to cut the images out of eps files and how to do it.

Any help is greatly appreciated,

What kinds of images? Are the files vector or raster or both? —

Open it in Illustrator. Select all. Is it made of paths and fills or is it a photo or art that is all of a piece? If the former, vector; if the latter, raster. Of course a file can contain both elements.
