The top line I believe was one continuous line that was broken to put a symbol in the middle. The bottom is just a short line with a curl on each end.

One way to get this effect is to draw freehand, using a pressure sensitive tablet with brush size tied to pressure. There are many other ways to do this, though.

One quick trick that often works is to resize the pattern to the final size, use levels to get a clean black and white version, blur it, and then use levels to get back the sharp edges, only without the jaggies.

A more accurate way to recreate the strokes - presumably at a larger resolution - would be to resize the image to the final size, use the pen tool to outline the strokes, and then fill the resulting path with the desired color.

I am reproducing these for a logo for someone, from a 96dpi web graphic (need to make a 300dpi graphic for the logo to be on some signs).
