Hi maria,
It sounds like you are using the 'Tool Preset Picker' to select the 'Add Canvas Texture' from the 'Art History' list which changes the tool from 'Brush' to 'Pattern Stamp Tool'.
One way would be to use the 'Paint Bucket Tool' then select the 'Canvas' texture and use the same settings you are using with the 'Pattern Stamp Tool'.
Another way would be to select the area then run the 'Texturizer' filter with the canvas texture loaded - this give a lot of control.
