when saving a photoshop eps file, my computer defaults to save as 1 bit (in the preview window).

what is the difference between the 1 bit and the 8 bit?

One bit looks like a black and white line drawing, eight bit is a limited colour representation of the original file.

This would just be the preview that one will see when placing the image in a page layout application. Saving a 1 bit preview will not affect the ulitmate printout, but if you want a better rendition of the file to design with, go for the 8bit previews.
