Addition, sorry:
If I scan a small page-size book and email, I guess it would suffice to
send
irregularly sized PDF files, but what if I wanted someone to be able to print the PDF. How can I maintain the original clarity while constraining to the boundaries of standard 8.5x11 paper?

Your scanning and conversion is done in one step through Acrobat, either Standard or Pro. Understand that I am *not* talking about the free Reader. I use this frequently for the same purpose you mentioned plus as a PDF, I can make the document interactive.
With your Acrobat program open, click on Create PDF > From Scanner. There are some limitations on resolution, but for text, you can easily live with the 600 dpi max allowed.
