Use the arrow key instead.
Be on text layer. Click in font family in options bar so that it’s all highlighted. Use arrow keys up and down.

font family options ??? sounds like MAC talk. I find nothing that says "font family options". when i hi light the text and pick a font, scrolling with the arrow key it does scroll through, however the text on the composite does not change.

After the text is typed select the move tool in the Tools Palette and then highlight the font then use the arrows.

Put your mouse cursor over the font name in the Option Bar. Wait. You’ll see the tooltip labeled "Set The Font Family". This is the Font Family thing YBM is talking about.

font family options ??? sounds like MAC talk.
It is neither Mac talk or PS talk. The term "font family" or if you want to get technical, "typographic family" is a traditional graphic design term. It refers to different variations of a type face (ie. bold, book, condensed, black, extended) Large "font families" will give a designer the best contrast in their typographic treatments. One of the largest type families is Univers (invented by Ardan Frutiger in 1952)
