What are equivalents to these GIMP functions?

I’m a GIMP user who would like to know how Photoshop
handles two specialized tasks, so I can cite the
Photoshop equivalent in a tutorial I’m writing.

The first task is when you have painted an area in the
picture the brightest red (that is, RGB = 255, 0, 0)
and then want to set the rest of the image to black.
I used GIMP’s "Levels" tool to do that.

The second task is when you want to get the numerical
value of the average intensity in, say, the red
channel alone. GIMP’s "Histogram" tool provides this.

Even better for the second task, can Photoshop
provide a count of the number of pixels in a given
channel equal or greater to a given intensity? GIMP
doesn’t have this capability.
