photoshop cs2

im running cs2 but also have cs3 i dont know how to edit a document and put new text in ive tried searching but cant find anything im on win xp home xp2 and also when i try help it says need to reinstal no help files but that can come later i just need to know how todelete text from a scanned document in jpeg format and add text. my scanner had ocr software i installed it but cant get it to work and when i bring up software it says no ocr i just dont have a clue what to do
