I have a document in both the PSD form and a JPG. I want to send it to a printer for postcards. The printer requires CMYK mode. Can I convert this in Elements to CMYK? If so, how? If not, how do you suggest I do this? If I do, will the colors look really different on my monitor?

Elements does not support CMYK mode. If you have Richard Lynch’s Hidden Power Tools, there’s a kind of a workaround for creating color separations there, but really, CMYK conversion is a complex art (to do it properly is far more complex than simply changing the mode) and you would probably be best off asking your printer how much he would charge to do it for you.
