BW Photos with Color

I have an HP Pavilion with XP, and I’m pretty new to Elements. I have a picture of a child holding a rose, and would like to make the photo black and white, with the flower in color. If I take the saturation to 0, how do I get the color back? Is there a better way? Can anyone help? Thanks!

There are many ways to do this. Here is one:
Starting with the original color picture, add a Hue/Saturation layer and move the Saturation slider all the way to the left (value -100) to change to B&W. Next select the Paintbrush Tool and set the Foreground color to black. With the Hue/Saturation layer active, paint over the flower to restore the color (note how this affects the layer mask in the Layers Palette). If you drift outside the flower, set the Foreground to white and paint over the excess color to change it black to B&W. You might want to use a soft brush to give a smooth transition between the flower and background.
