I changed my Auto Adjustment properties and used the "Save As Defaults" check-box when at the "Auto Color Correction Options" window.

How do I go about setting these Options back to their DEFAULT/ORIGINALLY INSTALLED settings?

I assume you mean in an adjustment layer or in the Levels dialogue???

Hold Alt key and click Reset, then save as defaults.

s3ntyn3l,
Open the "Auto Color Correction Options", choose "Enhance Per Channel Contrast" option, disable "Snap Neutral Midtones" (if active), and save the settings as default.
