I would like create Mpeg tutorials for our current and future employees ala :

demonstrating the 25-30 PhotoShop techniques that we use on a regular basis .. Is there any software that captures screen activity in mpeg form? My only other thought would be to point a digital video camera at the screen while I work, there must be a better way.
