I’ve always thought it would be great if there was a brush tool that you could set on desaturate. You would select the brush and then brush areas of the image. The brush would desaturate the colors that you ran the brush over.

We already have that brush in the tool palette. Look for the sponge icon, which is tied in with the dodge and burn tools. It doubles as the saturate tool.

And you have even more control if you use a Hue/Saturation Adjustment layer and paint in the areas you want to affect.

Peter’s way of working nondestructively certainly seems advisable but one could also simply set the Foreground Color to a neutral grey, set the Brush Mode to Color (alt-shift-C) and paint into the layer.
