I cannot for the life of me keep my preferences and color management settings saved the way I like it. I have to change every time I open CS2 and I know for a fact it should save those settings every time PS is closed. I am not pressing any keys on boot up either.

Can someone please point me in the right direction on how to fix…

Thanks

Your Prefs file has most likely become corrupt. Delete the file (as detailed in the FAQs) by pressing Ctrl+Alt+Shift as you fire up the program.

Once you have a prefs file you like, you may want to also save a backup to it. Then if you lose it again, or it becomes corrupt, you can copy and rename the backup.
