What you are seeing on screen is a very confused Photoshop — PS only knows what we tell it — and your question drives home the very core point of color management…
For Photoshop to Convert your Source File into your MonitorRGB, Photoshop has to know what the RGB "numbers" mean, the "color mapping" of the Source File.
What happens with Untagged files, Photoshop’s active Color Management System has to base the numbers, the "mapping," on something and thus will make an Assumption by Assigning Photoshop’s Working Space…
When we Image> Mode> Assign Profile, we are telling Photoshop that the RGB "numbers" are based on the particular color "map" of that particular ICC Profile, Color Space.
In turn, Photoshop Converts the new Source Space’s color "map" into the MonitorRGB.
When we Assign another ICC Profile, ColorSpace, we are in essence telling Photoshop the Source File’s RGB "numbers" have a particular meaning and the Color Management System re"maps" the color accordingly — thus the change in color.
An Image> Mode> Convert to Profile is a completely different beast…
