How to create custom Color Table with gradients?

Working on a print project – not web. I have a grayscale image and want to convert it to black plus a CMYK color, instead of blacka and white. I changed the grayscale to to Index Color. I select Image > Mode > Color Table…
I’m trying to create a custom color table that goes from black to a CMYK with gradients in between. Followed directions to do this but it’s not working. All I get are black plus 255 solid CMYK colors (all the same). No gradients. Any ideas?

Have you tried duotones? I sounds like what you want, though I’m not sure what exactly you need…
