Play with the anti-alias properties of the text (none, crisp, sharp, etc.) – if it looks broken up, go up one level; if blurry, go down a level. I find smooth usually works best on larger text, and crisp or sharp on smaller text.

Use live text instead of Photoshop text whenever you can – generally much more readable and the search engines recognize it.
