In my photoshop, whenever I have a blue image, and save it as .jpeg or any other format, it turns a shade of purple/violet. My mode is set to RGB.

Is their anyway to restore defaults?

Three options:

Turn off color management in photoshop

Calibrate your monitor correctly (see: Computer Darkroom <http://www.computer-darkroom.com/ps7-colour/ps7_1.htm>)

Reset your preferences (in the FAQ)

fourth option:

Convert your files to sRGB before saving for web.

It should reduce the colour shift.
